- Once used for preserving goods, Confit pots have a long rich history of use in French Kitchens. These pots were used to preserve duck & goose confit. After the cooking process, these jars were dug into the ground to help the preservation of the cooked meats.
- After these pots were full of food, they would be stored in cellars with no floors, allowing the pots to be placed into the ground. The unglazed base of the confit pot allows the natural coolness from the earth to penetrate the pot & preserve the contents. While the glazed top is an indication of how deep to bury it.
